A delightful spiced zucchini bread enriched with brown sugar, perfect for cozy evenings or gatherings.

Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup brown sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 2 large eggs
  • ½ cup vegetable oil
  • 1 tsp vanilla extract
  • 1 ½ cups grated zucchini

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a loaf pan.
  2. Combine the dry ingredients in one bowl.
  3. Whisk the wet ingredients in another bowl until well-blended.
  4. Fold in the grated zucchini to the wet mixture.
  5. Pour the batter into the prepared loaf pan.
  6. Bake for 50-60 minutes, or until a toothpick inserted comes out clean.

Notes

For a healthier option, substitute half of the all-purpose flour with whole wheat flour. Shredding the zucchini in advance helps remove excess moisture.
