Homemade refrigerator pickles add a crunchy, tangy bite to meals, perfect for summer picnics and barbecues.

Ingredients

  • 4 fresh cucumbers, sliced
  • 1 cup vinegar (white or apple cider)
  • 1 cup water
  • 1/2 cup sugar
  • 2 teaspoons salt
  • 1 tablespoon dill (optional)
  • 2 cloves garlic, smashed (optional)
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Wash the cucumbers and slice them into spears or rounds.
  2. Combine vinegar, water, sugar, and spices in a pot. Heat and stir until the sugar dissolves.
  3. Allow the brine to cool slightly.
  4. Pack the cucumbers into jars and pour the brine over them, ensuring they’re fully submerged.
  5. Seal the jars tightly and place them in the refrigerator.
  6. Enjoy the pickles after a few hours of chilling.

Notes

Use clean utensils to prevent contamination and extend the shelf life of your pickles. For a milder flavor, soak the cucumbers for a shorter time.
