A moist and sweet zucchini bread with a delightful pecan praline topping, perfect for breakfast or as a snack.

Ingredients

  • 2 cups grated fresh zucchini
  • 1 cup all-purpose flour
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup chopped pecans
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup pecan praline topping (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine dry ingredients in one bowl and wet ingredients with zucchini in another.
  3. Mix the two together, being careful not to overmix.
  4. Pour the batter into a prepared loaf pan.
  5. Sprinkle the pecan praline on top before baking.
  6. Bake for 50-60 minutes, or until a toothpick comes out clean.

Notes

For a dairy-free version, use plant-based milk. To make it gluten-free, substitute with a gluten-free flour blend.
