A moist and flavorful zucchini bread that makes a delightful snack or breakfast treat, perfect for using up garden zucchini.

Ingredients

  • 2 cups grated zucchini
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 2 large eggs
  • ½ cup vegetable oil
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp salt
  • 1 cup chopped walnuts (optional)
  • ½ cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Grate the zucchini and squeeze it dry to reduce moisture.
  3. In a large bowl, combine the wet ingredients: eggs and oil.
  4. Fold in the dry ingredients until just combined.
  5. Pour the batter into the prepared loaf pan.
  6. Bake for 50-60 minutes until golden brown and a toothpick comes out clean.

Notes

Squeeze out excess moisture from the grated zucchini for best results. Adapt the recipe with nuts or chocolate chips for extra flavor.
