A delightful rhubarb cake with a moist texture and a sweet-tart flavor, complemented by a rich buttery sauce.

Ingredients

  • 2 cups rhubarb, chopped
  • 1 cup sugar
  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ cup butter, melted
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tsp salt
  • ½ cup milk

Instructions

  1. Prepare the rhubarb by cutting it into small pieces and tossing with a bit of sugar.
  2. Mix the flour, baking powder, and salt in a bowl.
  3. Combine the melted butter, sugar, eggs, vanilla, and milk until blended.
  4. Pour the wet ingredients into the dry ingredients and stir until just mixed.
  5. Layer the batter with prepared rhubarb in a greased baking dish.
  6. Bake at 350°F for about 40-45 minutes, until the top is golden and a toothpick comes out clean.
  7. Cool and prepare the butter sauce by mixing melted butter with sugar.

Notes

Serve warm or at room temperature, possibly with vanilla ice cream. Can be garnished with powdered sugar or fresh mint leaves.
