Healthy & Moist Chocolate Zucchini Muffins are the perfect blend of rich flavor and hidden nutrition, perfect for breakfast or an afternoon snack.

Ingredients

  • 1 1/2 cups whole wheat flour
  • 1/2 cup cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup sweetener (sugar, honey, or maple syrup)
  • 1 cup grated zucchini
  • 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin.
  2. Whisk together the flour, baking powder, cocoa powder, and cinnamon in one bowl.
  3. Mix the eggs, oil, and sweetener until combined in another bowl.
  4. Fold in the grated zucchini followed by the dry ingredients.
  5. Scoop the batter into muffin cups and bake for 18 to 22 minutes.
  6. Check doneness by inserting a toothpick; it should come out clean.

Notes

For best results, use freshly grated zucchini and avoid overmixing the batter.
