Instructions

  1. Boil the potatoes until fork-tender.
  2. Drain and mash the potatoes.
  3. Fold in the shredded cheese, salt, and pepper.
  4. Warm the tortillas to make them pliable.
  5. Scoop the cheesy potato mixture onto each tortilla.
  6. Fold in the sides of the tortillas and roll tightly.
  7. Toast in a skillet until golden brown on each side.
