Soft, chewy cookies filled with warm flavors of brown sugar and cinnamon, packed with gooey caramel bits.

Ingredients

  • 1 cup brown sugar
  • 1/2 cup butter, softened
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 cup caramel bits

Instructions

  1. Cream together the brown sugar and butter until light and fluffy.
  2. Add in eggs and vanilla, mixing until combined.
  3. Whisk together the flour, baking soda, and cinnamon in a separate bowl.
  4. Incorporate the dry mixture into the wet ingredients gradually.
  5. Fold in the caramel bits.
  6. Scoop the dough onto a lined baking sheet.
  7. Bake until the edges are set and the centers remain slightly soft, about 10-12 minutes.
  8. Cool them just until firm before transferring to a rack.

Notes

For perfectly soft cookies, avoid overbaking. They’ll firm up as they cool. Consider browning the butter for a nutty depth.
