A delightful dessert featuring a buttery crust and vibrant apricot filling, perfect for summer gatherings.

Ingredients

  • 1 1/2 cups all-purpose flour (or almond flour for gluten-free)
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup granulated sugar
  • 4-5 fresh apricots, pitted and sliced
  • 1 tablespoon additional sugar for sprinkling

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the flour and sugar in a bowl.
  3. Cut in the butter until the mixture resembles coarse crumbs.
  4. Press this mixture into a tart pan, evenly across the bottom and up the sides.
  5. Pre-bake the crust for 10 minutes, then remove from oven.
  6. Arrange the sliced apricots on top of the crust in a decorative pattern.
  7. Sprinkle a tablespoon of sugar over the apricots for extra sweetness.
  8. Bake for 30-35 minutes until the crust is golden and the apricots are bubbling.
  9. Serve warm or at room temperature, optionally with whipped cream or ice cream.

Notes

For a dairy-free version, substitute butter with coconut oil or a plant-based spread. For added flavor, a sprinkle of cinnamon or nutmeg over the apricots can enhance the aroma.
