Ingredients

  • 2 cups mixed fresh vegetables (e.g., zucchini, bell peppers, spinach)
  • 1 cup cooked chicken or tofu
  • 2 tablespoons olive oil or avocado oil
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Heat the oil in a skillet over medium-high heat.
  2. Add the protein and cook until golden brown, about 5-7 minutes.
  3. Remove the protein from the pan and set it aside.
  4. Add the vegetables to the same skillet and sauté until vibrant and tender, about 2-3 minutes.
  5. Return the protein to the skillet, stir everything together, and adjust seasoning to taste.
